Scallion-Cucumber Raita with Fresh Pomegranate Arils

- 1 bunch green onions or scallions sliced, including greens
- 2 large cucumbers diced
- 2 cups unflavored Greek yogurt
- 1/2 cup pomegranate arils
- salt to taste
- ground pepper to taste
Prepare the vegetables, set aside.
In a large bowl, whisk the yogurt until smooth.
Add the remaining ingredients to the yogurt, and stir until well-mixed.
Refrigerate for 5 minutes to allow flavors to combine.
Serve immediately.
