BBQ Veggie & Rice Bowl

Beans
- 1 tablespoon oil
- 1/2 yellow onion minced (about 1 cup)
- 2 cloves garlic minced
- 2 15-ounce cans pinto beans half the liquid drained off
- 1 teaspoon ground cumin
- 1 tablespoon tomato paste
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 tablespoon maple syrup
- 2 tablespoons water
Veggie Rice Bowl
- 2 cups frozen corn kernels
- 2 zucchini diced (about 2 cups)
- 4 tomatoes diced (about 3 cups)
- 1/2 cup chopped cilantro
- 4 cups cooked brown rice warmed
Heat oil in a saucepan over medium heat. Add onions and garlic; cook for 2-4 minutes.
Add remaining ingredients for beans, turn heat to low; cook for 5 minutes.
Stir in corn, zucchini, tomatoes, and cilantro; bring to a simmer and remove from heat.
Serve over warmed brown rice.
