- 4 cups baby spinach washed
- 1/4 cup slivered almonds
- 4 tablespoons olive oil
- 1 large garlic clove
- sea salt and freshly ground pepper to taste
In a food processor, pulse all ingredients until it forms a pesto consistency--smooth yet a little chunky.
Transfer to a serving bowl and serve with gluten-free toast or crackers.
