Scallion-Cucumber Raita with Fresh Pomegranate Arils

  • 1 bunch green onions or scallions sliced, including greens
  • 2 large cucumbers diced
  • 2 cups unflavored Greek yogurt
  • 1/2 cup pomegranate arils
  • salt to taste
  • ground pepper to taste


  1. Prepare the vegetables, set aside.

  2. In a large bowl, whisk the yogurt until smooth.

  3. Add the remaining ingredients to the yogurt, and stir until well-mixed.

  4. Refrigerate for 5 minutes to allow flavors to combine.

  5. Serve immediately.
