Tomato Chia Jam

Tomato Chia Jam is a great accompaniment to your cheese platter, or as a condiment on a sandwich.

  • 2 cups diced roma tomatoes
  • 1/4 cup diced sweet onion
  • 1 clove garlic
  • 3/4 to 1 cup water
  • 1 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon honey
  • 1 tablespoon chia seeds


  1. Combine the tomatoes, onion, garlic, ¾ cup of water, lemon juice and honey in a medium pot.
  2. Simmer on medium low heat for an hour adding the last quarter cup of water if needed.  
  3. Once cooked with about a ¼ cup of liquid remaining, remove the mixture from the heat and add the chia seeds.
  4. Allow to cool completely and refrigerate.
